Directions for Sprouting Green Mung Beans Please note: A sprouting jar is not necessary, but it does make the process easy! You can find these at your local health food store. You can also use a jar and cheesecloth or even a fine-meshed colander. For a quart-sized jar, soak 1/4–1/3 cup mung beans with 3 times as much water as beans. Soak 6–8 hours, then drain completely. Rinse with fresh, lukewarm water. Ideal sprouting temperature is 70 degrees. Place the jar upside down and at an angle to drain completely. Cover jar with towel to keep beans dark. Gently rinse and drain the beans 2–3 times per day. Growing time will depend on the bean/seed.
